Gluten Free Apple Crepes

These gluten free apple crepes are really, really good, but they do take a little more time to make. Although they take more time, I definitely think they are worth it!

I did not grow up having crepes, so I never had them until I was an adult. They are so good! I don’t know if I make them correctly, but the end result tastes great! I had a little trouble at first with the batter, until I read a recipe that said to use a blender to mix the batter. This has helped a lot, because the eggs get blended in better. I start with a hot pan (no oil or butter in the pan). Using a small ladle, I take two scoops of batter and pour into the pan. Now, the instructions that I have seen say to swirl the pan to spread the batter around, but this never works for me, so I use my ladle and spread the batter around using a circular motion.

When the top of the crepe is dry, go ahead and flip it over. Then, just leave it on that side for a short time because it does not take long to cook this side.

I like to freeze the crepes that we don’t eat right away, so I place them between sheets of wax paper so that they don’t stick together.

Most recipes that I have seen use whipped cream in the filling, but I don’t usually plan ahead when making crepes, so I don’t normally have any on hand. Because of this, I came up with my own recipe for a cream cheese spread. It is not light and fluffy, but still tastes good! I spread it over the whole crepe. I will have the recipe below.

For the apple topping, I just bought a can of apple pie filling and mashed it up with a fork. You could also make your own apple pie filling and that would probably taste even better!

Next, drizzle some caramel sauce over the top. I used Smucker’s caramel that is in the ice cream topping section in the store. This is so good!

Gluten Free Apple Crepes

INGREDIENTS FOR THE CREPES:

3/4 Cup Gluten Free Cup4Cup Flour (If using regular flour, use 1 cup)

1 Tablespoon Sugar

1 1/2 Cups milk

4 large eggs

3 Tablespoons melted butter

INGREDIENTS FOR THE FILLING:

1/3 Cup Milk

1/2 Cup Powered Sugar

8 oz. Cream cheese

1/2 teaspoon Vanilla Extract

IGREDIENTS FOR THE TOPPING:

Apple Pie Filling

Caramel Sauce

Chopped Walnuts

INSTRUCTIONS FOR CREPES:

  1. Starting with the liquid ingredients, put all of the ingredients in a blender and blend on low speed until all ingredients are mixed well.
  2. With a small ladle, pour two spoonfuls into your pan and either swirl the pan to spread the batter around, or use the ladle to spread, using a circular motion.
  3. When the crepe is dry on top, flip it over to the other side and cook for just a few seconds.
  4. If you are going to freeze some of the crepes, place between two sheets of wax paper to keep them from sticking together.

INSTRUCTIONS FOR FILLING:

  1. Put all of the ingredients into a mixing bowl and, using a hand mixer, blend all ingredients.
  2. Spread cream cheese filling onto a crepe and roll up the crepe.
  3. Mash up the pie filling with a fork and place some of it on top of the crepe
  4. Drizzle Caramel sauce of top.
  5. Finish with chopped Walnuts.

This recipe makes approximately 20 crepes.
